Currently Shotgun's display options for the currency field only support the US Dollar $ symbol. It would be useful if additional currency symbols were an option in the display configuration.

There unfortunately hasn't been any movement on this request yet. As of today there are zero votes for the feature, so it hasn't bubbled up in the priority list.
In the meantime while more support for this feature is gathered, a potential workaround would be to use a float type field, rather than currency. This way costs can still be tracked accurately, but without the prepended $ symbol.
