On my main tasks menu under Dashboard, I cannot sort my tasks via sequence. I can display a column called sequence name, but though I've added the shots to the proper sequence under shots, the same sequence tab is unavailable is not available under task. What is the difference between sequence and sequence name?

Not sure how your shotgun is set up but you could try to...
Dashboard/Tasks - Clink on Group - drop down to - Linked Fields - Link/Shot/Sequence
This will group all your tasks by sequence, I'm not sure if this was exactly what you were looking for in your sort? but may lead in you the right direction.You can do the same also to add an additional sequence field and not the sequence name.

John, I wanted to provide the following solution for your setup. Because your Tasks are linked to Shots, and your Shots are linked to Sequences--you're able to group, per Ed's response, by the linked Shot's Sequence field while you're in a Task page. You would find this under the "Linked Fields" header in the "Group" drop down button. Typically it would look like this: "Link > Shot > Sequence" (see image below)
In your particular setup though, you would group by "Entity > Shot > Sequence"
