Custom project set up through the toolkit/desktop UI

It is quite vexing to set up a new project in Shotgun, I have to rely on some default setting (which I can't use until I update the toolkit core and our IT department refuses to do so without assurances that someone at the studio can fix all our pipelines should said update break something as they don't know anything about shotgun), or a previous project which we are trying very very hard to break very far away from as the previous person set up our pipeline very poorly from an IT and tech art standpoint.
It would be awesome if we could just go through setting up folders for where our files will be saved through the UI (and never have to create the folders in the schema/ directory AND THEN have to do it all over again in the templates.yml file AND THEN make sure everything between those two setups are reflected in multiple other yml files)
