We want to be able to delete the main Project Dashboard on only one Project. However this doesn't seem to be possible with the 'page' drop-down menu. Is there some way to do this?

Unfortunately, right now these dashboard pages are special and can't be deleted! We're thinking of changing this in the future.
One thing you might try to soften the blow: adjust the permissions on that dashboard page ('page' > 'design page') to prune what people can see.
